Bolu Biasa :-)



More and more order from Lia, Kyla's mom :-) :-)

When Lia came to me and talked about "Bolu Biasa" aka "simple cake" not decorated ones, I was confused and didn't know what I was going to do with the cake. For me naked cake will look so poor in my eyes, I won't be able to stand and not decorate them, hahahahaha...but customer is a king!



So here it is....I came up with 2 layer of vanilla sponge cake with blueberry jam filling. And to make it more tasty I put some shredded cheddar cheese on the top of other layer before baking them in the oven. And guess what??...Lia and family just love this cake, this was actually the second order from her, previously she ordered 3 cakes.

Peach & Cinnamon Cake



Another try in my kitchen taken from Cakes & Cake Decorating, Step by Step by Angela Nilsen, Sarah Maxwell & Janice Murfitt. I got this book from Meilina and I just love everything in it especially those unique recipes.

I was inspired by Pear & Cardamon Spice Cake when finally ended up with Peach and Cinnamon Cake.

The cake was sent for my dearest best friend birthday who always interested in some unique veggies & fruits cake recipes. Glad everyone who enjoyed the cake was happy, they said it's yummy...the top cake gives a sensational flavour and the cake itself is yummy.

Mocca Taart



This was my first time to make a special mocca taart. I made this for JJ's birthday to share with his colleagues at work.

I just love the cake texture and mocca smell, very yummy...and thinking of to make another batch this weekend.

Mocca Taart ala Joris' Kitchen
(resep cake untuk 1 loyang ukuran kotak 30 x 30 x 4cm. Untuk 2 susun bikin resep cakenya 2 kali ya....)

Bahan untuk cake:
8 butir telur utuh ukuran medium
4 butir kuning telur ukuran medium
250 gr gula pasir halus
140 gr terigu serba guna
60 gr maizena
1 sdt baking powder
1 sdm emulsifier
190 gr mentega cair (best result pake full mentega/butter ya supaya cakenya lebih tasty dan tekstur lembut)
1 sdm mocca pasta (aku pake t*****o)
air kopi yang terbuat dari 1 sdt kopi instant (aku pake n****e) dicairkan dengan 2 sdm air hangat

Cara:
1. Alasi loyang kotak 30 x 30 x 4cm dengan kertas roti dan semir kertas dengan margarin secara merata, sisi loyang aku biarkan tanpa polesan margarin.
2. Larutkan kopi instant dengan air hangat, sisihkan, biarkan dingin
3. Panaskan oven dengan suhu 180 der
4. Ayak terigu + maizena + baking powder, sisihkan
5. Kocok gula pasir, telur, air kopi dan emulsifier sampai kental berjejak dengan kecepatan tinggi
6. Masukkan campuran terigu dengan kecepatan rendah (speed 1) sampai asal tercampur, matikan mixer, lanjutkan dengan aduk merata dengan spatula.
7. Masukkan campuran mentega cair + pasta mocca ke dalam adonan, aduk balik sampai benar-benar tercampur rata
8. Tuang adonan kedalam loyang dan panggan hingga matang kira-kira 30 menit klo pake otangku hehehehe...

*) Aku bikin 2 resep untuk 2 tumpuk.
**) Adonan dituang 2/3 tinggi loyang...kalau ada sisa adonan masukin aja ke cup atau loyang kecil yang lain itung-itung bonus hehehehe...karena memang banyaknya adonan tergantung pada ukuran telur. Kalau telurnya besar-besar biasanya aku kurangi telur utuhnya jadi 6 butir saja.


Bahan untuk krim mocca dan garnish:
- 1300ml dairy whipped cream (aku pake r**h)
- 5 sdm mocca pasta (aku pake t*******o)
- 200 gr almond cincang dipanggang

Cara:

- whipped cream + mocca pasta dikocok sampai mengembang dan kental

Simple sirup mocca:Larut dan didihkan 100gr gula pasir + 300ml air, dinginkan. Tambahkan 1 sdt pasta mocca, simple sirup siap digunakan.

Finishing:
1. Ambil 1 lembar cake, basahi dengan sirup.
2. Tambahkan krim filling mocca secara penuh, taburi dengan 100gr almond cincang panggang tutu lagi dengan krim mocca
3. Tumpuk lagi dengan 1 lembar cake yang lain, basahi dengan sirup
4. Hias sesuai selera (aku hias minimalis aja pake tambahan cherry merah dipotong-potong - karena ntar juga dipotongin kata swami hahahaha.....)

Classic cheese cake for Idul Fitri 2009

3 layer sponge cake nan moist dan lembut dengan filling cream cheese dan taburan keju cheddar parut di setiap lapisan kemudian cake fully covered with cream cheese dan finishing penuhi dengan taburan keju cheddar yang rich.

Spiced Passion Cake



I met Meilina thru Facebook and become good friends. Meilina who lives in NY is also the owner of www.kadonusantara.com and after some conversation thru email then I becoming one of her cake vendors.

Last summer Meilina visited Indonesia and finally we both met for the first time. Meilina gave a very precious gift, "Cakes & Cake Decorating, Step by Step" by Angela Nilsen, Sarah Maxwell & Janice Murfitt.

This book is awesome! I love the recipes they have, and since the first time I read this book I was in love with Spice Passion Cake as this cake is pretty unique. Last night I tried this cake...and love the result. This cake is moist, spiced sponge and when combining with the cheese, the taste is just perfect! I didn't have cream cheese last night so I substitute the topping using butter and castor sugar mix + cheddar cheese shreded.



Ingredients(serves 10)
1 medium carrot
1 medium courgette/zukini
3 large eggs (I used 4 medium size)
115gr / 4 oz/1/2 cup soft light brown sugar (I substitute with palm sugar)
30ml/2 tbs ground almonds
finely grated zest of 1 orange (I used lemon)
115gr/ 4 oz/1 cup self-raising wholemeal flour (I used 1 cup - 2 tbs all purpose flour + 1 tsp baking powder)
5ml/1 tsp ground cinnamon

For the topping
175gr/ 6 oz/1/4 cup low -fat soft cheese
5ml/1 tsp clear honey

My topping was:
1/4 cup butter
2 tbs castor sugar
cheddar cheese shreded as you wish

Directions1. Preheat the oven to 180 C/350 F/Gas 4. Line an 18cm/7 inch square tin with baking parchment. Coarsely grate the carrot and courgette/zukini.
2. Put the egg yolks, sugar, ground almonds, and orange/lemon zest into a bowl and whisk until very thick and light.
3. Shift the flour and cinnamon together and fold into the mixture with the grated vegetables. Add any bran left from the flour in the sieve.
4. Whisk the egg whites until stiff and carefully fold them in, half at a time. Spoon into the prepared tin. Bake in the oven for 1 hour, covering the top with foil after 40 minutes.
5. Leave to cool in the tin for about 5 minutes, then turn out on to a wire rack and carefully remove the lining paper.
6. For the topping, beat together the cheese and honey, and spread over the cake.

Christmas Surabaya Layer Cake




This Surabaya layer cake was order from Ahui who previously ordered some cupcakes for her birthday.

Ahui asked for undecorated surabaya layer cake but then as it's for christmas present she asked me to give a little touch of Christmas on the cake. Thank you Ahui for your order.



Surabaya is one of cake that has many egg yolks in it. For this 24cm square I used 39 egg yolks hehehe...as this cake has many egg yolk and butter in it, the texture is very moist. For me, a thin slice of surabaya layer cake is more than enough hehehehe...Any one want to place the same order for Chinese New Year?....I've been told that sending layer cakes during Chinese New Year means we also send a layer prosperous whishes...interested to order? just text me at 0817 985 2792 :-)

Cheese Sponge Cake & Steamed Brownies

On lazy Saturday, my mobile rang...it's mbak Yuli Sebayang, a friend from Cyber World (Multiply) who is also a good customer.



Mbak Yuli again ordered black sticky rice steamed brownies..she loves it very much and has ordered this several times. This time besides the black sticky rice steamed brownie, mbak Yuli also ordered chocolate and cheese steamed brownie and cheese sponge cake.

Classic Black Forest for Tian's Birthday



Order came from JJ's boss. He wanted a 24cm square classic black forest for his relative's birthday.



Well it wasn't 100% classic as I added some mandarin oranges to give a more look hehehe...

I am glad that JJ's boss and family happy and satisfied with the cake...the classic look, rhum taste and everything just met their expectation.

Wedding Gift for Ikoh & Dandy



This chocolate rich cake was a gift from the company for the wedding of Ikoh and Dandy.



I made 3 layers of chocolate rich cake with ganache filling. The size is 30 x 30cm. And it wasn't easy to find the right and nice box for the cake. I made special order for the box and it cost a lot in total plus the delivery price, but it was worthed.

Chocolate Almond Cake for Melisa's Husband



This time Melisa ordered a chocolate almond cake for her husband's birthday today. According to Melisa, her husband doesn't like sponge cake stuff so I decided to make him a chocolate devil cake using american recipe that is usually butter cake type buat still very moist and chocolaty! It was the same recipe I used for making Meene (Melisa's daughter) one month cake a while ago.

One thing I missed was the wording. I absolutely can't remember even didn't take a note of the wording preference for the cake, so I made it myself for the wording. Gladly that Melisa wasn't mine with it. Thanks Mel!



This morning I received sms from Melisa. They loved the cake as usual and the taste was just perfect for them.

"Lagi nulis sms pas sms mu masuk :-) Kuenya baru aku makan nih. Enak, cantik, gak terlalu manis, coklatnya mantap, cakenya padat cocok sama coklat dan almondnya. Tapi prasaan wordingnya bukn happy bday my love deh hehehe...Udah habis 2 ptg untuk breakfast. Enak pokoke 2 jempol deh."

Classic Black Forest



I made this delicious classic black forest on our 7th Anniversary. My husband loves this cake so much. My kids like it too except for the dark cherry filling, they don't really care about it and prefer to eat the cake without the dark cherry filling.

Original recipe taken from NCC Indonesia and as usual I modified the recipe a little bit to adjust it to my husband's taste.



Bahan:
8 kuning telur
6 putih telur
60 gr coklat bubuk
40 gr maizena
100 gr terigu serba guna
1 sdm emulsifier
1 sdt coklat pasta blackforest (my modification)
75 gr margarin + 25 gr butter - lelehkan (my modification, original recipe 100gr margarine)
200 gr gula pasir
1 sdt rhum bakar (or if you don't consume rhum you may substitute it to 1/2 tsp vanilla)
1 sdt baking powder

500 gr butter cream / whipped cream
100 gr DCC (dark cooking chocolate)
1 kaleng cherry hitam
2 sdm maizena larutkan dengan sedikit air
1 sdm Kirsch (if you don't consume alcohol you may substitute it by using 1 tsp cinnamon powder/kayu manis bubuk)
Coklat dan cherry merah untuk hiasan

Simple syrup:
100 gr gula pasir
200 ml air
1 sdm rhum black forest

Cara :
1. Ayak terigu + coklat bubuk + maizena + baking powder
2. Kocok gula pasir + telur + emulsifier sampai mengembang dan kental
3. Masukkan campuran terigu, aduk rata
4. Masukkan margarine dan butter leleh, aduk rata
5. Masukkan rhum bakar dan coklat pasta black forest, aduk rata
6. Tuang dalam Loyang diameter 20cm, oven hingga matang – dinginkan
7. Saring dan pisahkan cherry hitam dari airnya . Potong 2 cherry hitam
8. Panaskan air cherry hitam sampai mendidih.
9. Masukkan larutan maizena dan kirsch (kayu manis), masak lagi sampai mendidih
10.Masukkan potongan cherry hitam, masak sampai mendidih lagi
11.Angkat dari api dan dinginkan
12.Masak gula dan air sampai mendidih, angkat dan dinginkan. Setelah dingin, tambahkan 1 sdm rhum black forest .

Penyelesaian:
1. Potong kue menjadi 2 atau 3 bagian
2. Basahi lapisan pertama dengan symple syrup, lalu tuang sebagian filling dark chery lalu tambahkan Whipped cream yang sudah dikocok kaku.
3. Tutup dengan lapisan ke 2, lakukan hal yang sama sampai semuanya habis.
4. Terakhir tutup semua kue dengan W/P cream.. trus hias dengan cherry merah.. percantik deh sesuka hati..

*) Note : untuk mendampingi filling dark cherry, kemarin aku pake chocolate ganache dan menurutku pas sekali kombinasinya dan bikin lebih yummy.

Fruity Vanilla Taart



Order from Diah for her birthday today! A moist and delicious vanilla cake with chocolate ganache and blueberry filling topped with assorted fruits.



I always happy and enjoy making any cakes or pies with fruits topping. It's such a lot fun assemble those healthy fruits to give a fresh and natural look to the cakes and fruits.

Fruit cake Melisa



Melisa, my cyber best friend again order a cake for the person she loves. Previously she ordered some small size cakes for her daughter, Meene, 1 month celebration. This time Melisa wanted a heart shape cake with fruits topping.



It's 2 layers of vanilla sponge cake with vanilla syrup to moist the cake. I use the combination of chocolate and oranges for the cake filling and strawberry butter cream and fruits as the topping. Plus adding some chocolate sticks and greem bow to make the cake more appealing.

I am glad Melisa loves the cake so much, here is the text message I received from her yesterday when she received the cake :

"Udah terima kuenya. Iiiii cantik gw ampe senyum2 sdr hihihi"
(Have received the cake. Iiii beautiful I can't stop smiling hihihihi..."

Mandarin Orange Chocolate Cake



A Mandarin orange chocolate cake to close the order of Midodareni night.

2 layers of chocolate sponge cake with filling of chocolate ganache and mandarin orange. I used light mandarin orange syrup to moist the cake, then the cake was fully covered with chocolate ganache and topped with mandarin oranges and red cherries.

Fruit Taart Midodareni Night



The second order was Fruit Taart. Just like other fruit taart, it made of 2 layers of sponge cake with blueberry filling and strawberry flavour butter cream and I combined peach heavy syrup and mandarin orange light syrup to moist the cake.



The fruits to assemble the cakes were grapes, strawberries, kiwis and peaches.

Chocolate fruit taart cake



I met Ani thru Natural Cooking Club (NCC) mailing list. It's a pleasure for me to receive an order from her. She ordered for a chocolate fruit taart cake and one thing I like from her a lot is when she contacted me to order this cake, she said I please just take my time, I can do her cake anytime I have time for it. Wow!....thank you very much mbak Ani. It's been a pretty busy week for me.

Fruit Taart for Putu


Last week a friend from previous company I worked for text me and ordered this fruit taart for his colleague. He was confused between fruit taart and fruit pie and he asked me to choose for him. For me, I love both, fruit taart and fruit pie so kindly hard to choose...hahaha...wish that he would order them both hahaha...finally he decided to order this fruit taart.




It's always fun when assembling the fruits to the cake or pie...this time I played with kiwi, strawberry and oranges only but they still look pretty though, don't they? A little bit different with the previous fruit taart I made before, this one I made it of 2 layers of vanilla sponge cake with filling vanilla butter cream and blueberry. And for the simple sirup, I used the mandarin syrup from the can. Turned out very tutty fruitty and yummy :-)
