Brownie



It's been some times I didn't bake brownie. It's order from Mbak Diana. Still not 100% satisfied with the result. I have been thinking of doing another method in baking this brownie, with the same recipe I am pretty sure it will turn out much better than this.

Looking for a new experiment and hopefully by this week.

Meeting Snack

Again, DESC ordered some snacks for meeting and training last week. This time the choices were:

Brownie...




It's been a while I didn't bake a brownie. This week I got a chance to bake brownie again as Peppy ordered brownie for christmas snack. I made 2 batches. One for Peppy and one for my own family. Absolutely delicious and great for my sweet teeth :-)

Brownie Cupcakes




This brownie cupcakes recipe is one of the best brownies I have ever had! The method is very simple and the taste is very rich as they combine cocoa and chocolate. I don't use the frosting...too sweet for out teeth :-)

The recipe is taken from one of my favorite websites, Martha Stewart. I decided to add a teaspoon of vanilla extract for a better flavour and change the method a little bit.

What I post here is how the way I make my brownie cupcakes based on Martha Stewart recipe.




Ingredients :
6 tbs unsalted butter
8 ounces semi-sweet chocolate + 3 ounces chocolate chips
3 large eggs (my eggs were pretty small so I used 4)
1 cup sugar
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa
1/8 teaspoon baking soda (I decided not to use baking soda as I don't like the taste and substitute it with 1/4 baking powder)
1 tsp vanilla extract
1 cup coarsely chopped walnuts, (optional) - (didn't use it)
Nonstick cooking spray
Mrs. Milman's Chocolate Frosting (decided not to use the frosting)

Directions :
1. Preheat the oven to 350 degrees. Line a 12-count muffin tin with cupcake liners. Set aside.
2. In a saucepan over low heat, melt the butter and 8 ounces of chocolate. Stir until smooth. Remove from heat, and set aside.
3. In a large bowl, whisk together eggs and sugar. Add flour, cocoa, and baking powder . Stir in the melted chocolate and vanilla extract until combined. Stir in remaining 3 ounces of chocolate chips and nuts if desired.
4. Using a 2-ounce ice cream scoop, fill cupcake liners 3/4 full with batter. Bake until a firm crust forms on the cupcakes, about 20 minutes. Remove to a wire rack to cool, about 10 minutes. Remove cupcakes from pan, and continue to cool on a wire rack.
5. Ice cupcakes with a generous amount of chocolate frosting.

Notes :
I only fill cupcake liners 2/3 full with the batter - 3/4 is too full and in my oven it took 30 - 35 mins to get them done.

Cream Cheese Brownie

Last night I tried her cream cheese brownie. Yum.....it turned out perfect! just delicious...when I tried this brownie, I remember my friend, Cherryl who always said : "Ohh my dear heaven" when trying something really good. So last night I said..."Ohh my dear heaven!"

I just copy paste the recipe directly from Stephanie' site as I didn't make much adjustment on it. I hope you don't mind Stephanie :-)

Ingredients :

Brownie Layer:

1/2 cup (113 grams) unsalted butter, cut into pieces (I used Orchid butter)
4 ounces (114 grams) unsweetened chocolate, coarsely chopped (I used Theis)
1 1/4 cups (250 grams) granulated white sugar (I used only 200gr)
1 teaspoon pure vanilla extract
2 large eggs (I used 3 medium eggs)
1/2 cup (70 grams) all purpose flour
1/4 teaspoon salt

Cream Cheese Layer:

8 ounces (227 grams) cream cheese, at room temperature (I used Anchor)
1/3 cup (65 grams) granulated white sugar (I used only 50gr)
1 teaspoon pure vanilla extract
1 large egg (I used 2 small eggs)


Directions:

Preheat oven to 325 degrees F (160 degrees C) and place the rack in the center of the oven. Have ready a 9 x 9 inch (23 x 23 cm) square baking pan that has been lined with aluminum foil across the bottom and up two opposite sides of the pan. Set aside.

In a stainless steel (heatproof) bowl placed over a saucepan of simmering water, melt the butter and chocolate. Remove from heat and stir in the sugar and vanilla extract. Add the eggs, one at a time, beating well (with a wooden spoon) after each addition. Stir in the flour and salt and beat, with a wooden spoon, until the batter is smooth and glossy and comes away from the sides of the pan (about one minute). Remove 1/2 cup of the brownie batter and set aside. Place the remainder of the brownie batter evenly into the prepared pan.

Then in the bowl of your food processor (or with a hand mixer), process the cream cheese until smooth. Add the sugar, vanilla, and egg and process until creamy and smooth. Spread the cream cheese filling over the brownie layer. Spoon small dollops of the reserved brownie batter evenly on top of the cream cheese filling. Then with a table knife or wooden skewer, swirl the two batters without mixing them.

Bake in the preheated oven for about 25 minutes or until the brownies start to pull away from the sides of the pan and the edges of the brownies are just beginning to brown. Remove from oven and place on a wire rack to cool. Refrigerate the brownies until they are firm enough to cut into squares (at least two hours). Once chilled, remove the brownies from the pan by lifting with the ends of the foil and transfer to a cutting board. With a sharp knife, cut into 16 squares. It is a good idea to have a damp cloth nearby to wipe your knife between cuts. These brownies can be stored in the refrigerator for several days.

Makes about 16 - 2 inch squares.

One of my colleague asked me to bake a chocolate nuts brownis for her. I rarely baked brownis, mostly I did the steamed one. But well let's try on!

Brownis Kukus Coklat

My family really love brownis kukus coklat, maklum hubby is a chocolate lover :-) Dari uji coba berkali-kali akhirnya aku temukan resep yang pas yaitu milik Pak Sahak, rekan di NCC. Resep Pak Sahak ini kembali aku modifikasi sampai ditemukan taste yang paling pas untuk seluruh keluarga :-)

Inilah hasil modifikasi resep Pak Sahak yang terkenal yahuudd dan super legit :-)



Bahan A :

100 gr margarin (original recipe - 200 gr mentega/butter)

100 ml minyak goreng

150 gr dark cooking chocolate

Bahan B :

4 butir telur ayam ukuran sedang

200 gr gula pasir (original recipe 250 gr)

1 sdt TBM

1/2 sdt garam


Bahan C :

150 gr tepung terigu

20 gr tepung maizena

40 gr susu bubuk

40 gr coklat bubukBahan

Bahan D :

1 sdt rhum essence (optional - original recipe nggak pake)


Bahan E :

100 gr meises coklat

chocolate chips untuk taburan

Directions :

1. Cairkan bahan A lalu dinginkan - tips waktu mencairkan margarin dulu dan jangan sampai mendidih kemudian masukkan dark cooking chocolate yang sudah dipotong kecil-kecil kedalam margarin yang sudah mencair, aduk rata sekali lagi jangan sampai mendidih. Pake api kecil aja. Setelah itu angkat, tambahkan minyak goreng aduk rata, sisihkan

2. Kocok bahan B sampai mengembang

3. Masukkan bahan A kedalam bahan B aduk sampai rata

4. Masukkan bahan C secara bertahap lalu aduk sampai merata (tips : untuk bahan C, sebelumnya aku campur rata dulu semua bahan di dalam wadah trus aku ayak supaya lebih tercampur rapi).

5. Masukkan bahan D aduk rata

6. Tuang 1/2 adonan ke dalam loyang kukus selama 15 menit.

7. Tes dengan tes tusuk setelah matang, tanpa mengangkat loyang dari kukusan, tambahkan 100 gr meises, ratakan setelah itu tuang sisa adonan kedalam loyang dan taburi bagian atas dengan chocolate chips, kukus lagi selama 20 menit. Jangan lupa saat mengukus lapisi tutup dengan lap supaya uap tidak menetes ke adonan
