Fruit Pie for Pakdhe Joni

More on fruit pies!! I think fruit pie has becoming primadona in my kitchen. This is another fruit pie order for birthday. I changed the design a little bit. Don't like what I did with the wording though...need more practice!

Well, I think when people start to get tired of birthday cake and would like to find another alternative of healthier stuff for birthday, fruit pie can be a good alternative don't you think? As I have just received another fruit pie order for a birthday next week :-)

Fruit Pie with Cream Cheese Filling

Another fruit pie but this time I used cream cheese for filling as requested. This time I want to share the recipe so that you might can try and give me your opinion about it.

For the crust, so far I would say this is the best sweet crust I have ever made!

Pie crust :

300 gr + 2 tbs all purpose flour

175 gr butter or butter + margarine/shortening 50:50 (chilled it before using)

1 egg, lightly beaten

30 gr granulated sugar

1/4 tsp salt

Directions :

1. Mix in large bowl flour, sugar and salt using whisk or finger

2. Cut in butter using fork, pastry cutter or knive, add in egg mix until dough holds together.

3. Wrap the pie crust in plastic wrap then place in refrigerator for about 30 minutes - 1 hour

4. Roll the ball of pie crust out until it is 3 or 4mm thick and you have about 24 - 25cm in diameter.

5. Put the circle in a 22-23cm (9 inch) pie plate, trimming any extra dough from the edges with a sharp knife. Return it to the refrigerator for at least 20 mins to chill the butter and rest the gluten.

6. Preheat oven to 200 degrees C. Line unbaked crust with parchment paper or aluminum foil. Fill tart pan with pie weights, rice or beans, making sure the weights are to the top of the pan and evenly distributed over the entire surface. Bake crust for 20 to 25 minutes until crust is dry and lightly golden brown. Remove weights and cool crust on wire rack before filling.

Cream Cheese Filling:

330 gr cream cheese

180 gr butter

180 gr castor sugar

1 1/2 tsp vanilla extract

Mix all together until soft and creamy

To assemble pie :

Spread a melted chocolate over the bottom and sides of crust to prevent the crust from getting soggy. Let the chocolate dry between 20 - 30 minutes. Spread the cream cheese filling and decorate the pie with any kind of fruits you desire and coat the fruit using glaze to make the fruits look shiny.

More for Fruit Pie

After posting the mini fruit pie & mini savory pie, I received a text message on Friday evening from Angky asking if I could make another fruit pie to be sent to Pekayon, Pasar Rebo on Sunday. It's a bigger size of fruit pie, she requested the diameter should be more than 18cm. As I have never done it before I asked her to give me some time to think and to calculate the cost.

Saturday morning I confirmed Angky that I could make the fruit pie for her. After searching in the internet about step by step making a great crust then I gave my first try to do the bigger crust using the crust recipe I used for mini fruit pie. First try didn't go well...so I change the method of doing it and it worked well for the second try, the result turned pretty good even though I didn't do very well in trimming the edges, still need more practise...so give me some more orders on pie then I will be very happy to practise more hehehehe...

Purple & Yellow for Meene

Melisa is a good friend of mine I knew from cyber world. I met Melisa thru Balita Anda Mailing List, then we happened to have lunch together and since then become best friends.

In chinese tradition they have one month baby celebration and Melisa asked me to make some cup cakes and mini cake for her daughter's one month baby celebration. The color theme are purple and yellow but I added some whites and greens to make them nicer and more colorful.

Thanks Mel for the order, it was lots of fun doing them. My love to Max and Meene!

From the queen to Arya

The Queen of cup cakes with busy with big order from XL, that's why the queen asked me to bake her nephew's birthday cup cakes.

Well, I was a bit nervous doing this order as this is the order from the queen of cup cakes, what if it doesn't turn out nice and delicious as the queen usually does? Well,...just do my best then.

Glad that Arya and family loved the cup cakes....the queen also gave me an appreciation for them....I feel soo great!

Birthday cake for Michael

Second order was a birthday cake for Michale, Lynda's nephew. I know Lynda Maitimu William from Multiply. Lynda emailed from Holland saying that she was coming back to visit her family in Jakarta and would like to order birthday cake for her nephew, Michael.

Chocolate devil cake covered with plastic icing/fondant and Michael's edible image. I am glad knowing Lynda and her family satisfied with cake....and planning to order some more :-)

Thank you Lynda and have a safe trip back to Holland :-)

P.S. Apologize for the pic as only taken by my cell phone camera.

Lemon Cup Cakes

Sunday afternoon together with other christian colleagues we visited an orphanage in Jati Makmur area, not too far from where I live. I baked them 110 lemon cup cakes. The recipe I used was egg whites cup cakes from Martha Steward that I have posted before. This time, the cup cakes turned out even much better then the first trial. It is more moist and the lemon flavour was really rich. Jonathan and I really love the lemon butter cream I made, I think I am gonna make some more for us this week, for weekend snack :-)

Cup Cake - cow's theme

There was Yukki, called me last week asking me whether I would be able to make her a 3D cow cake. Well...as I have never been done that, I told her the truth...and after I think of it I told her that I still don't have enough guts to make a 3D cow cake. What I could do maybe just making a birthday cake with little cows from fondant for the decoration or something else like cow color theme, etc. No more phone calls from Yukki until last Friday afternoon Yukki called me to confirm her order that was a dozen of cup cakes with little cow made from fondant and picture edible.

I told Yukki to combine the edible picture and little fondat cow would be a bit too much, the little cow would cover the picture edible...and yes, when I tried to make little cows from fondant and put them on the top of cup cakep which already covered with the edible image, seems like those cows sitting on some boday's face and I thought it's not proper...so I decided to take out the fondant cows. Besides the edible itself already has cow's picture next to the person picture.

I hope Yukki won't mind with that...I received a thank you sms from Yukki yesterday evening for the cup cakes and that relieves me :-)

Mc Queen for Mumtaz

When Luki, Mumtaz's mom called me to order this cake the time frame is a bit too tight but I kept said yes to her as I thought it could be a good challenge.

I don't know what was going on with me....I thought I did not do my best when making Mc Queen's birthday cake for Mumtaz. Am I getting a baking blue? I don't know...maybe I wasn't too well....My alergic coughing has been pretty annoying at night. Oh no.....that's too many excuse which actually still not acceptable!
The Mc queen was made of lapis surbaya (surabaya layer cake). As Luki didn't want any base cake, I put some more cup cakes for Mumtaz alphabetical name and one more cup cake for putting the candle. The cake plate was too tight to put all things together and that was just very annoying me, but I was ran out of time so I just let them be.

So when Luki came to pick up the cake on Saturday morning, I gave her some discount for her son's birthday cake. I am sorry Luki....I think I should have done better than this....thank you for your understanding and hope Mumtaz' birthday went well...he is such a cute littel boy!
